Colored Easter "Eggs"

Make colored Easter "Eggs" using tofu. Tofu is white, very bland and tasteless.  Make tofu come alive with your favorite flavors. Enjoy coloring your "tofu eggs" all year long!

Purple:     blueberries
Pink:        beet juice and beets (shown)
Yellow:     curry or mustard
Red:         paprika
White:      coconut milk

Ingredients: firm tofu, beets, red onions, scallions, mushrooms & alfalfa sprouts

Cutting board:
red onion, 2 slices, chopped to 1st bowl
mushrooms, handful, chopped to 1st bowl
scallion, 2, chopped to 2nd bowl
tofu, 1/4 box, use a fork to mash as you remove it from the box, to the 2nd bowl

Large pan:
Turn on stove - med heat - 4 T water
Cook onions and mushrooms for 3 minutes.
Pour contents of 2nd bowl into pan.  Heat for 2 minutes.
Add 2 T sliced, canned beets to pan.
No seasonings are needed.  Serves 2.

Beets are slippery and lots of fun for young cooks. Beets and tofu are also very good for your blood flow.
